Question: How can I make homemade yoghurt? I have heard of yoghurt makers but never seen them in stores. My mum used to have a glass jar in the fridge when we were kids and make yoghurt in it, we'd strain off the yoghurt culture once a week and have homemade yoghurt. How do you make the yoghurt culture?
Answer: How to make homemade yogurt
Yogurt has been a healthy staple of many traditional cultures. Consuming yogurt regularly helps keep the colon healthy by populating it with beneficial bacteria, which helps keep harmful substances from proliferating. However, much of the commercial products found in the average grocery store is loaded with sugar, artificial flavors, colors, and other additives. Making your own yogurt at home is a cheaper, healthier alternative in which allows you to control what goes in it.
Things You’ll Need:
* candy thermometer
* oven thermometer (optional)
* saucepan
* good quality whole milk yogurt like Stoneyfield, Brown Cow, or Seven Stars
* large bowl or pot (optional)
* 4 cups whole milk
Preheat the oven to about 150 degrees. (A pilot light on a gas stove may be sufficient.) Pour the milk into the saucepan. Attach the candy thermometer to the pan so that the temperature increments are clearly visible. Heat the yogurt gently (I like to use the number 3 setting on my electric stove.) until it reaches 180 degrees F.
Remove from heat and let the temperature fall to 110 degrees F. I like to speed up the process by sitting it in a pan of cold water. It is also advisable to change this water once or twice to keep the temperature on a steady decline without plateauing.
Add the yogurt to the milk and stir. Pour the milk into an oven safe dish that can hold the yogurt-milk mixture. It won't boil, so there's no need for a lot of extra room in the dish.
Put the dish in the oven overnight or about eight hours. The longer it stays in the oven, the more tart it gets. Eight hours gives the yogurt a nice mild flavor, which is much more palatable than most commercial plain yogurts.
Carefully pour the yogurt (it will be runnier than commercial yogurt) into a container for refrigeration. It will firm up more upon completely cooling. When you are ready to enjoy, mix with plenty of natural goodies like maple syrup, honey, granola, fresh or frozen fruit, nuts, etc. The sky is the limit!

Question: What can I use instead of yoghurt in a recipe? I don't want to use yoghurt because i'm vegan and i don't know where i can buy soy yoghurt from.
Answer: If there's a natural foods store near your home (www.happycow.net lists restaurants and health food stores all over the world), they should carry soygurt. I don't know if it's available outside the U.S. yet (by the way you spell it "yoghurt", I imagine you are not in the U.S., as I am), but Purely Decadent also has vegan yogurt made of coconut milk.
