Answer: usually about a 1/4 of a cup is good. Almonds are great for you but they do contain fat, even if it is poly and monounsaturated. Also, depending on what else you are eating, you could get "stopped up"

Question: How can i make sliced almonds stick to chicken? An old friend I have lost touch with (and can't contact) once made a dish which was chicken, encrusted with sliced almonds and fried. (It's a chinese dish, if that helps.)
I've tried to replicate this dish (using eggs as a batter), but the almonds always fall off. I've looked it up, and the only sources I've found do similar dishes with ground, or crushed almonds. I'd like to do it with sliced ones, as it was a spectacular eating experience.
Answer: You are missing a step.
Chicken is slippery. Raw eggs are slippery. Therefore raw egg slips right off of the chicken!
What you need to do first is to dredge the chicken breasts in flour to lightly coat them.
The flour will give the eggs something to stick to. Then the almonds will stick to the eggs, and everything will stick to the chicken!!
Make sure to season the chicken AND the flour.
Question: How to harvest almonds and make salted almonds? I just love salted almonds! There's an almond tree behind my yard and I was wondering how and when to harvest the "fruit" and just as important, how do I process them to get salted almonds?
Answer: Just first be sure it is sweet almond and not bitter almond.
Bitter almond has several poisons including cyanide, like peach pits. They don't taste good.
The mature almond fruit splits open lengthwise down the side, exposing the ripe almond nut. You can easily get the dry kernel by simply cracking open the stone. When you boil them, the kernel's outer covering comes off and only the white meat remains.

After the bloom the petals drop. The leaves grow, soon the fuzzy gray- green “fruit” appears. The hull is what you see and it continues to harden and grow. Around July it begins to split open. Between mid-August and late October (depending on the variety and growing conditions) the split widens which exposes the shell and this allows the nut to dry. The whole nut and stem finally separate and shortly before harvest, the hull opens completely. The almonds are ready to harvest. Almonds vary, so check to see what kind you have before attempting to eat any.

Question: recipe for almonds with vinegar and salt? I'm looking for a recipe for almonds with vinegar and salt like the nuts Blue Diamond sells in cans. When I tried soaking the almonds and then baking, it didn't work. Any suggestions?
Answer: Here's a recipe I like, you could omit the pepper if that doesn't appeal to you.
2 cups lightly toasted California almonds
½ cup firmly packed brown sugar
2/3 cup balsamic vinegar
½ teaspoon kosher salt
¼ teaspoon chili powder or cayenne pepper
1. Line a baking sheet with parchment paper.
2. Place the almonds, brown sugar, and vinegar in a large heavy-bottom skillet and cook over medium heat. Stir 3-5 minutes until the sugar melts, the almonds are well coated with the mixture, and there is no liquid at the bottom. If using salt or chili powder, sprinkle evenly.
3. Transfer the almonds to the prepared sheet, separating the individual nuts. Set aside to cool before serving.

Question: How do you make soaked or sprouted raw almonds taste better? I don't like the taste of soaked or sprouted raw almonds. They taste, well, too RAW. They have that weird taste I just can't describe, but it's the same one that exists in all soaked nuts and seeds I try. Any tips on making them more palatable? I LOVE the taste of raw almonds before they are soaked though, and prefer the crunch too.
Answer: boil them in a simple syrup then toast them off.

Question: Almonds instead of walnuts in fudge recipe? I have a chocolate fudge recipe that calls for walnuts but I have almonds that I would like to use instead. Do you think that it would taste okay? I've used almonds instead of walnuts in a brownie recipe but I'm not sure because the almonds won't be baked as in the brownies, they'll be added in at the end of the cooking process.

Question: How to grind almonds without losing their oil? Im looking for a way to grind almonds so I can use them on recipes(salads, fish, chicken, etc). The thing is, most of their flavor comes from their oil.
I tried with a blender, a mortar or with a rolling pin and it didnt quite work.
What methods do you suggest I could use to grind almonds without drying their oil on the process?
