Question: Where would I get coconut fat in the Southern California area? I mean the European-style cooking fat that comes from a coconut, not what we call cocoa butter that comes from a cacao bean.
Answer: Do you mean coconut milk which contains the high fatty part of the fresh ground and strained coconut? If so it is available at most groceries in the ethnic food aisle. If not Try at 99 Ranch Market, they got a couple near irvine, or at an Asian Market. Nina's Groceries in El Toro has alot of British Imported Groceries too.
Call them up, they could let you know.
Question: Why is coconut and palm oil saturated just like animal fats? Is it bad for you?
Answer: All fats, plant or animal, contain both unsaturated and saturated fats. Even olive oil has saturated fats, and even lard has unsaturated fats. Only the relative proportions differ, and there are various types of fatty acids as well. Tropical oils evolved to be mostly saturated because of the climate. Cell membranes are made of fatty acids and need to be flexible without liquefying. For the same reason, oils from temperate crops are largely unsaturated.
As for whether they are bad or not, traditional medical opinion is that they are, but there are sources which claim otherwise. I personally don't know who is right. I eat coconut oil every now and then because I like its taste and I have no intention of cutting it out. It is very well suited to frying because of its heat stability, just like peanut oil.
FYI, the major fatty acid in coconut is myristic acid (in addition to lauric acid), and in palm oil, palmitic acid. Beef and dairy contain mainly stearic acid, and this difference is often cited by the pro-coconut camp. I am not sure if myristic acid is healthier for you than stearic acid (or not), but it's something to ponder.

Answer: The saturated fats in coconuts and palm oil are equally bad as the saturated fats in animal fats. They are probably not exactly the same.

Answer: Has to do with the chemical make-up. Coconut milk is a mixed bag as it does contain saturated fat, which is HDLs and can clog your arteries, but it also contains LDLs which can lower cholesteral..this is per the Harvard School of Public Health.
Because of its chemical properties, it can be used in an extreme pinch pinch as a blood replacement/transfusion, if you are traveling in extreme 3rd world countries that do not have a blood bank available.

Question: Saturated fat in Coconut Oil and Animal fats.? I’ve been reading articales regading the benefit of using solely coconut oil for all cooking, eg. baking, stir-fry, frying etc. The articles said that the high level of saturated fat contents makes coconut oil stable during cooking and therefore does not produce trans-fat and other toxins when subject to heat. If this is the case, then what about animual fat? My mom used to use animual fat for cooking and it can make any dishes taste great. She used to chopped off all the fatty bits from pork or beef into pieces and put them in dry fry pan on highe heat, the fatty bits will then dissolve into liquids. It becomes solid once they are cooled off and mom used it to cook vegies and meat. However, she stopped this practice due to the concerns that it’s too high in fat. So if coconut oil is healty due to its high saturated fat level, does it mean cooking using animaual fat is also healthy?? Thank you!!

Thanks for answering. Coconuts oil is one of the few vegetable oils high in saturated fats, the other one is palm oils. What really confuses me is that there has been new evidence found that the trans- fatty acid found in most of the polyunsaturated oils are the cause of cardiovascular disease. Saturated fats aren’t as bad as people tend to believe. But I am open to all sorts of suggestions

Question: If coconut oil is metabolized immediately by the liver and sent to the bloodstream, Is it acting like a carb? When balancing ones diet between Protiens,Carbs and Fats; if coconut oil goes directly to the liver to be metabolized, it is behaving like a carb not like a fat. Soo how is it treated in a diet balanced between Protiens, carbs and fats?
Answer: Coconut oil is a fat, period. *All* digestible fats in your diet are directly absorbed into the bloodstream and head straight for the liver. When you are looking at the breakdown of food into proteins, carbs, and fats for the purposes of a diet, you are looking at what is going into your mouth--nothing more complicated than that.

Question: Is the fat in canned coconut still good for you? I realize the canning process requires high heat and was wondering if that in any way broke down the properties in the fat that make it healthy. Or are the benefits only with raw coconut oil?

The real answer is that they are still good for you. You need the fats in vegetables and some saturated fats to make for a healthy person. Unless you want to go to the trouble of pressing out the oils yourself, the raw oils need to have preservatives, additives, high heat or what ever to prevent such nasties as salmonella and botulism from getting into the packaging.

Research shows that replacing other cooking oils with virgin coconut oil generally creates a more favorable HDL/LDL ratio. This oil has antiviral, antibacterial, antimicrobial, and antiprotozoal properties and, like all whole foods, contains nutrients for a healthy body.
Saturated Fat: A Vital Ingredient for a Healthy Body: Over many decades coconut oil received bad publicity due to its saturated fat content, but research has shown that not all saturated fats are alike and coconut oil is unique in its structural make-up. It is not only the highest source of saturated fats (92%) but included in this is the highest source of saturated medium chain triglycerides (62%) of any naturally occurring vegan food source. Furthermore around 50% of these MCT’s are made up of lauric acid, the most important essential fatty acid in building and maintaining the body’s immune system.

Virgin v. Extra Virgin Coconut Oil
Don't be mislead by the term "extra virgin" when used in conjunction with coconut oil. This term is borrowed from the olive oil industry and there is no such product or existing standard that can be applied to coconut oil production. If you see the term "extra virgin" be assured that it is simply a marketing ploy to encourage you to believe that the oil has something more to offer than virgin coconut oil.
