Free Low Carb Recipe
Question: Do you have a good recipe for sugar free low carb "cheesecake"? I know it is not a real cheesecake, but I really am craving it.
Answer: This is a basic cheesecake recipe. It is fairly dense (and becomes more so when completely cold). We like it with a strawberry topping, especially when strawberries are in season. I haven't tried very much variation as far as fat levels in the cream cheese, but I think you can substitute, at least to an extent. When I tried just substituting low fat for one of the bricks, the batter seemed slightly looser, but I only detected a slight difference in the final product.
INGREDIENTS:
3 packages (1 and 1/2 lbs) cream cheese (room temperature)
4 eggs (preferably room temperature)
1 and 1/2 teaspoon (1/2 Tablespoon) vanilla
1 and 1/2 teaspoon (1/2 Tablespoon) lemon juice
1 and 1/3 cups sugar equivalent of artificial sweetener (I like liquid concentrates for this recipe)
1/4 cup sour cream
Crust:
1 cup almond meal
2 T melted butter
2T worth artificial sweetener
PREPARATION:
Heat oven to 375 F.
Tip: If you have bricks or a pizza stone or unglazed ceramic tile*, put them on the lower rack of the oven. This will hold the heat in the oven. This is good for cheesecakes not baked in a water bath. (Well, actually, it's helpful for any kind of baking, as it keeps the heat in the oven more constant. I keep a pizza stone in the oven most of the time.)
Combine ingredients for crust, and press into the bottom of a springform pan. Bake for 8 to 10 minutes, until fragrant and beginning to brown.
Raise oven heat to 400 F, or lower to 350 F if you're using a water bath (see below).
Put cream cheese in mixing bowl, and beat until fluffy. Add other ingredients, scraping the bowl and beaters each time (this is very important), fully incorporating each ingredient. When all ingredients are combined, scrape one more time, beat one more minute, and pour mixture into pan over crust.
Instructions for water bath: Wrap the bottom and sides of the springform pan in foil, put it in a baking pan and pour boiling water around the sides. Bake at 350 F for 60 to 90 minutes, checking often. When the cake is firm to touch but slightly soft in the center, or the center reaches 155 F, remove from oven.
Instructions for non-water bath: For this method, you start the cake at a high temperature, and it slowly drops. If you have stoneware, bricks, etc, this allows it to happen at a slower rate, and I get better results in less time. Put the cheesecake on a sheet pan in case of drippage. After putting the cheesecake in the oven at 400 F, turn the oven down to 200 F. Bake for 60 to 90 minutes, checking often after an hour. When the cake is firm to touch but slightly soft in the center, or the center reaches 155 F, remove from oven.

Chocolate Chip Ice Cream Recipe
Iced desserts have been around since the early Chinese culture, and iced creams were even served at the White House in the early 1800s. Once freezers were mass produced in the early 1920s, it became a treat that the general population could enjoy regularly.
I have always loved chocolate chip ice cream as my personal favorite style. It has the fresh lightness of vanilla, plus the added texture and flavor of chocolate bits. This version is nicely low in sugar, low in calories, low in carbs. You can make it just as chunk-rich or chunk-free as you wish.
Ingredients:
3/4 cup heavy cream
1/2 cup half-and-half
3/8 cup Splenda
1/4 cup ice cold water
1/4 tsp vanilla
dash salt
1 frozen CarboLite milk chocolate bar
... cut into small chunks
Mix all but the chocolate chunks and put it into your ice cream maker. Turn on and watch for about 20 minutes. Toss in the chips and it should be done in another 5 or 10 minutes.
Makes 2 servings
6g carbs per serving
You can double the recipe if you'd like to make enough for four!
* If you use Splenda in packets, be sure to adjust accordingly! The packets are a different level of sweetness compared to normal bulk Splenda.

Question: Anyone know of a sugar-free, low-carb egg nog? I have been a diabetic for 17-years, and I miss a lot of the holiday treats. I would especially like to enjoy an egg nog or two this season. Are there any commercial sugar-free, low-carb egg nogs? If not, does anyone know how to make their own? Preferably, the recipe would work well with Soy or Rice Milk.
Answer: I too want some low carb eggnog. I found this haven't tried it yet but I am going to.
Traditional Eggnog
Separate 2 eggs into two bowls, one with whites, one with yolks.
Beat a ½ tsp. of Splenda into the yolks until lemon-yellow color.
Beat a ½ tsp. of Splenda into whites until peaks form (frothy).
Gently fold yolks and whites together.
Slowly mix in about a 1/3 cup of cream (half and half, heavy or whipping) until you get the consistency that you want. You can use as much as a cup if you like it less eggy.
Taste – if it’s not sweet enough for you, add more Splenda, mix in sugar-free syrup (French Vanilla is good) or add a shot of spiced rum.
Sprinkle nutmeg on top.
This recipe makes about a cup of eggnog.
Note: Leftover eggnog should be refrigerated, and if not consumed within 24 hours, discarded.
What makes this recipe traditional is the frothy texture and the fact that the eggs are raw. If that is unsettling to you, or if the traditional recipe looks too labor intensive, then try the next one.
Safe and Easy Eggnog
Mix 1 cup egg substitute with about 1/3 cup cream (same choices as above).
Add artificial sweetner to taste (1-2 tsps).
Sprinkle nutmeg on top.
The reason that this is a safe alternative is that the egg substitute is pasteurized. Also, as you can see, it is very easy. The down side is that is isn’t as thick and foamy as the traditional.
Question: Does anyone have any low-carb biscuit recipes? I would like a low-carb (not gluten free) biscuit recipe, with a maximum of 10g carbohydrates per 100g. Suitable for people on Tony Ferguson / Aitkins diet (low-carb and high protein). The packet mixtures I have seen contain mainly almond meal & coconut, but are quite expensive.

Great Biscuits Recipe (Total Carbs = 4.9g)

1 cup self rising flour
1/2 cup butter or margarine (set it out for 8-10 minutes or so)
1/2 cup sour cream
Mix the ingredients together.
Roll the dough and cut the biscuits about 1/2 inch thick.
Bake at 400 degrees for 10-15 minutes (oven variation)**I use a cast iron biscuit skillet.

1 teaspoon salt
1/2 cup butter
1 (3 ounce) package cream cheese
Preheat the oven to 425 degrees.
Sift together the flour and salt. Add the butter, piece by piece, and the cream cheese. Mix until you have a dough that holds together.
Do not overmix.
Turn the dough out onto a lightly floured work surface and, with a rolling pin, roll it out to a thickness of about 1/2".
Cut out rounds with a biscuit cutter and place on a lightly buttered baking sheet. Bake until pale brown, about 20 minutes.
Serve warm.
Question: I need recipes for healthy, fat-free, low cal and/or low carb desserts? Im trying to eat better and my problem is my sweet tooth. I love desserts and I can not live without them. Any diet that requires me to cut them out, I fail after the first day. So got any recipes for desserts that will work with a healthy diet? Im not on anything specific... 1 1/2 x Bananas
1/2 cup Applesauce
ts Vanilla
1/2 cup Brown sugar (or honey or brown rice syrup)
Method :
Sift together: 1 scant cup of Whole wheat flour 1.5 tsp baking powder dash salt 1 tsp cinnamon dash nutmeg 1-2 tbsp sesame seeds (optional- really taste good, and add protein for you vegans)
Blend wet ingredients in blender. mix dry and wet. Stir in 3/4 c. oatmeal
(the regular cereal type) stir in 2 tbsp raisins (optional but delicious)
Drop by generous spoonfuls onto cooking-sprayed cookie sheet.
Bake at 350 for 20-30 min or until just browning. (without the oil they take longer to bake than you think!... check them though after 15 min to see how they are doing)

• 4 (4 oz.) skinless, boneless chicken breasts

• 1 cup SMUCKER'S Sugar Free Orange Marmalade
• 1/3 cup raspberry vinegar
• 1/4 teaspoon salt
• 1/8 teaspoon pepper
• Crisco Cooking Spray
Directions Spray a large skillet with Crisco cooking spray; heat over medium heat until hot. Add chicken; cook 2 minutes on each side or until lightly browned.Place chicken in an 11x7-inch baking dish coated with cooking spray. Bake at 450 degrees for 20 minutes or until cooked through. Remove chicken; cool and cut into ¼-inch strips.In a large bowl, combine chicken, rice, green onions, and grapes and pecans, if desired. Toss well and set aside. In a small bowl, combine the orange rind and next 4 ingredients; stir well. Pour over chicken mixture; toss well.

Question: Low-carb, egg free breakfast? Help! My husband has gone low-carb, and doesn't like eggs (or sausage). This makes making breakfast for him an absolute nightmare.
