Question: Any low-carb recipes you have actually used? I am looking for some low carb recipes for hearty meals. I do low carb but my boyfriend doesn't. It's hard to make meals that both he can enjoy and I can eat. I'm looking for hearty recipes that won't make him feel like he's missing out on something.
I have recipes books and have pulled the websites, but am looking for some actual recipes that you have tried and made yourself that worked out well. Thanks!
Answer: Here is another "Mashed cauliflower" version. Steam fresh, or frozen cauliflower until soft. Drain very well. I put it in the blender, and pulse until very smooth. Take 1/2 of a package of dry Ranch dressing mix, and blend into 1/2 C sour cream, or yogurt, with freshly ground black pepper. Add to cauliflower. Sometimes I put this into a casserole and bake it to make like a twice baked potato casserole. Delicious!
Question: Ideas for good wheat free low carb recipes? I'm trying to follow a low carb diet (for hypoglycemia) but I'm also allergic to wheat which makes it a little harder to cook and find simple recipes. Does anyone have any recipes like this that they've tried before?

Note:
Here's a dish that can stave off a pizza craving for low carb dieters or those who need to avoid wheat products. Zucchini or spaghetti squash work equally well for this crust, with spaghetti squash providing a somewhat sweeter flavor. Bake this in a traditional 9" pie pan, not a pizza pan.
This is a vegetarian recipe, but you could easily add whatever pizza topping are your favorites, including pepperoni or sausage or other veggies.
3 C grated raw zucchini
OR
3 C cooked spaghetti squash
2 eggs, beaten
2 1/2C mozzarella cheese
1 1/2 C tomato sauce
1/2 small onion, thinly sliced
1 small green bell pepper, chopped
1/2 C sliced mushrooms
1/4 C sliced black olives
1/2 C grated Parmesan cheese
1 tsp. dried oregano
1 tsp. dried basil
1 T olive oil
Serves 3-4
Preheat oven to 400° F.
Squeeze the excess moisture out of the grated zucchini or cooked spaghetti squash with paper towels. Mix the squash, eggs and 1 1/2 cups mozzarella together and press into the bottom of a pie pan. Bake for about 10 minutes.
Remove the pan from the oven and spread the tomato sauce, vegetables or other pizza toppings and the remaining cheeses over the crust. Sprinkle with oregano and basil and drizzle the olive oil over the top. Bake for 25 minutes or until cheese is lightly browned.

Answer: Spaghetti w /creamy tomatoe pepper sauce
2 tblsp olive oil
1 sm onion chopped
2 tblsp minced garlic
1 lrg bell pepper chopped
2 lrg tomatoes
1/4 c fat free half and half
1/2 c grated 2% parmesan cheese
1/2 tsp black pepper
8 c whole wheat spaghetti
Hear oil in large skillet over med low heat. add onion and garlic. cook
over med heat 5 min or untill onion is soft,stirring constantly . Add bell
pepper cook 4 min or untill pepper is crisp tender. stir in tomatoes .
2. Remove from heat let cool 2 minutes. return skillet to heat . gradually
stir in half and half,cheese and black pepper.reduce heat to low,cook 5 minutes

Answer: I bring celery sticks with cream cheese, ham and cheese roll ups, black olives, peanuts, carrot sticks and sometimes I make deviled eggs.

Question: Help! Does anyone know any good low-carb recipes? I'm doing great on my low-carb diet but I'm starting to get bored with the same ole same ole. Got any recipes that are low carb and taste good? I would really appreciate them!
Answer: What are you looking for, there's millions of them, not all of them very tasty though. Do you like eggs? I like deviled eggs, so if you do, take hard boiled egg yolks(4) and Dijon mustard (1teasp), mayo(1 tblsp), 1/2 teasp curry, pinch of cayenne pepper and salt and pepper to taste, mix it all up and fill the egg white halves with it. It's yummy. Let me know what you're looking for. I went on low-carb 6 yrs ago and went from a size tight 18 to a size 10 and held it for a long time. Due to some other problems I had to go off of it 2 yrs ago though and it slowly crept up on me again, but I went back on it a week ago and my keto sticks are showing that I'm doing good, so do my jeans(as of yet, a size 16 again, yikes!)

PS: you probably know this, but just substituting white sugar for brown and using different flour is NOT going to do the trick.
Wonder what people think low-carbing is about. When I'm really strict I keep my carbs between 10 - 20g a day, sometimes lower, but that is extreme.

Answer: Mock Baked Potato Soup
1 med head cauliflower
2 Tbsp chopped onion
salt and pepper
32 oz chicken broth
2 slices crisp bacon
3 Tbsp chopped chives
3 oz shredded Cheddar cheese
1/2 cup or more of light cream
2 tbsp butter
Directions:
Steam cauliflower till tender.
Drain, place in baking dish, drizzle with olive oil and salt and pepper and broil till golden brown.
Heat little oil and sauté onions till soft but not brown.
Add cauliflower, broth and simmer till very tender.
Puree half mixture in blender and return to pot.
Add cheese, bacon, cream and chives and stir till cheese melted.
Add butter, stir till melted and serve.
Question: Any inexpensive low carb recipes? My husband is diabetic and we are both overweight. We have a VERY limited budget. Does anyone have any cheap but good low-carb recipes to share? Answer: Instead of mashed potatoes I toss some steamed cauliflower in the food processor with a bit of butter, ranch dressing Parmesan cheese and 2T of unflavored protine powder (that helps give it that starchy feeling). Works great as a substitute.
I always made crustless quiches. I would follow a tasty recipe but just stick it in a buttered glass pie dish and bake it until golden on top.
I used to be on the Atkins Diet, but it's the holidays and well...

I'm looking for free low carb recipes that don't use weird ingredients like soy flour or any other ingredients that are specialised. American websites tend to use a lot of these I've noticed, but I'm looking for recipes that use 'normal' everyday foods.

Crock Pot Enchiladas
Serves 6
1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Chopped Green Chilies (leave these out if you don't want it to be spicy)
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup
Instructions:
Brown hamburger and chopped onion and pour off grease.
Put all ingredients in crock pot. Mix and cook low 4-6 hours.

Chicken Parmesan
Serves 6
1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped
Instructions:
Preheat the oven to 350ºF
In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.
Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

Chicken Pasta Alfredo
Serves 6
6 Qts Water
12 oz Fettuccine Pasta
2 Tbsp Peanut Oil
6 (4 oz) Chicken Breast, boneless, skinless
2 (10-3/4 oz can) Cream of Mushroom Soup
1 (20 oz bag) Frozen Broccoli Florets
3/4 Cup Parmesan Cheese, grated
Instructions:
Heat a large pot of water, over high heat. When water comes to a boil add the pasta and boil for 8-10 minutes. Drain; reserving 2 cups pasta water. Cut the chicken into strips (1/4''x1''); set aside.
In a large frying pan, over medium-high heat, add the oil and chicken pieces stirring frequently until golden brown.
In a medium saucepan, over medium heat, add the chicken pieces, sauce, 1/4 cup reserved pasta water, stirring frequently. Add the remaining pasta water into the saucepan and bring just to a boil, then add the broccoli. Cook for 1-2 minutes. Remove from heat.
Divide the cooked pasta evenly between serving dishes and top with chicken and broccoli mixture.

Spanish Meatloaf
Serves 6
1-1/2 lb Ground Beef, lean
1 (5.5 oz envelope) Wyler's ''Hearty Beef Stew'' Soup Starter
1 (8 oz bag) Mexican Style Cheddar Cheese, shredded
1 (4 oz can) Diced Green Chili Peppers
1 (14-1/2 oz can) Diced Tomatoes, drained
1 Cup BBQ Sauce (recommended: Kraft Carb Well)
Instructions:
Preheat the oven to 350ºF
In a large bowl add the soup starter, diced green chili peppers, and the diced tomatoes; mix until the liquid is absorbed. Add the ground beef and BBQ sauce and mix thoroughly until well combined.
Place 1/2 of the mixture in a loaf pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal.
Bake for 45 minutes; drain any residual fat if necessary.
Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.

Serves 6
1 (8 oz pkg.) Louis Kemp Crab Delights, flaked
3/4 Cup Mexican Style Cheddar Cheese, shredded
1/2 (8 oz pkg.) Cream Cheese, cut into 1/4'' cubes
1/4 Cup Green Onions, sliced
1/2 Tsp Salt
1/2 Tsp Basil
1/2 Cup Heart Healthy Bisquick
1 Cup 1% Milk ''Skim''
1/2 Cup Eggbeaters
3 SecondsNonstick Cooking Spray
Instructions:
Preheat the oven to 350ºF
Mix the crab delights, shredded cheese, cream cheese, onions, salt, and basil in a medium bowl.
Coat a 9-inch pie plate with nonstick cooking spray and spread the crab mixture into the bottom.
Beat the remaining ingredients until smooth. Pour over the crab mixture and bake for about 40-45 minutes.
Serve immediately.

Strawberry Shake
Serves 2
1 Cup Frozen Strawberries, thawed
2 Tbsp Honey
1 Cup Cold 2%Milk
1 Cup Plain Yogurt
2 Tbsp Sugar Substitute (recommended: Splenda)
2 Whole Strawberries, garnish
Instructions:
Puree the strawberries and honey in a blender or food processor. Add milk, sweetener and yogurt; blend until smooth.
Pour into glasses; garnish each with a whole strawberry

1 pkg. (4-serving size) JELL-O Pistachio Flavor Instant Pudding & Pie Filling ( sugar- free)
1 can (20 oz.) DOLE Crushed Pineapple, in juice, undrained
1 cup JET-PUFFED Miniature Marshmallows
1/2 cup chopped PLANTERS Pecans
1-1/2 cups (1/2 of 8-oz. tub) thawed COOL WHIP LITE OR FREE Whipped Topping
MIX dry pudding mix, pineapple, marshmallows and pecans in large bowl until well blended.
ADD whipped topping; stir gently until well blended. Cover.
REFRIGERATE 1 hour or until ready to serve.

BTW, low carbing can mean just cutting out sugar and breads.. I feel much better with out sugar and breads.. don't you think that is healthy? Doesn't mean you have to cut out salads etc..
Answer: then i would say, cut out the sugar and breads. Any meal that envolves sugar, use splenda, any meal that envovles bread, cut it out and used an alternative like, actually just dont have the meal cause the meal was designed the way it is and changing it too much might make it taste horrible. I like food, and when i cook, I make it delicous and dont even worry about the carbs, I just cut down my intake. I love salads, i just made a really good one the other day, the way I made it wasnt low carb but just take out the carbs and it will probably still taste great. It was a Romano lettuce with some caesar, avocado, bacon bits, dried tomatoes, crutons, some parmason cheese...mmm. Cut down on the intake, not the taste.-------------------------------------------------------------------Ha ha, hope you find a good one....you know, an angel came to me and gave me these holy recipies...here, try them.
Egg Salad Rollup Recipe
Ingredients:
3 hard boiled eggs
1 stalk celery
10 olives
1/8 cup onion powder
dash black pepper
dash salt
2 Tbsp mustard
1/4 cup mayo
1 low carb tortilla
Chop up the eggs, celery and olives into small pieces. Blend all ingredients together using more or less mayo to your own preference. Lay the ingredients in a stripe just above the center of the tortilla.

Philly Cheese Steaks
2 lbs. good sirloin chopped up
1 8-oz package cream cheese
8-oz provelone cheese
1 red pepper
1 portabella mushroom
1 onion
2 cloves of garlic
Olive oil
Lots of seasonings
Heat up skillet. Pour olive oil into pan. Saute red pepper, portabella, onion, and garlic Add salt, pepper, and any other seasonings that you like (I like garlic salt and onion powder)
Add sirloin and cook to your preferred temperature. Cut up cream cheese and provel into chunks. Add the cheeses and stir until you have made a sauce. Serve in bowls.
4 generous servings at 8g carbs each.

Answer: I came up with maki sushi that doesn't use rice. I made it for people who were doing low carb as well as "normals" and both groups loved it. :)
Ingredients:
Nori seaweed wrappers
Carrots
Zuchinni
Daikon (lo bak)
Cauliflower
Sesame Oil
Mirin
Toasted sesame seeds
Fillings of your choice (smoked salmon, tuna, shrimp, crab, avocado, sliced marinated shiitaki mushrooms, etc.)
Method:
Grate the carrots, zuchinni, and daikon but keep them seperated. Sprinkle a bit of sesame oil, mirin and sesame seeds into each dish and toss until the veggies are coated. Set aside.
Boil the cauliflower until very, very tender. Drain. Puree. Set aside.
Prepare the fillings of your choice. I used avocados, shiitaki mushrooms (which I marinated in a bit of teriyaki sauce) shrimps, crab and salmon for the sushi I made.
Now for the fun bit!
Place a sheet of nori on bamboo sushi roller mat or piece of plastic wrap. Place either the grated carrot, zuchinni, daikon, OR pureed cauliflower on about 1/2 of the nori. Then put in filling of choice. Once filled, roll into a tube, seal edges with a bit of water and then slice into 6 slices.
These are the combos I used:
Grated carrot w/ marinated shiitaki mushrooms
Grated zuchinni and carrot w/ crab and avocado
Pureed cauliflower w/ salmon (I mixed wasabi in with the cauliflower puree for extra flavour)
Daikon and carrot w/ shrimps
Zuchinni, avocado and crab
Cauliflower puree w/ shiitaki mushroom and grated carrot
Experiment and have fun.

Question: I am in need of some simple low carb recipes that taste great! Can anyone help me? I just started a low carb diet a few weeks ago. I am seeing tremendous results, but I am running out of ideas for meals and snacks. I am afraid if I make the same things over and over, the lack of variety will reduce my chances of success! Answer: I run a low carb forum that has been running since 2002 and there's heaps of recipes in the recipe section that are good no matter where you live as they don't rely on a lot of low carb products like bake mixes etc because we just don't have them here in Australia.

Question: What are some easy, inexpensive low-carb recipes? I use chicken a lot, but I want to experiment with other foods and meats. Any suggestions or recipes?
Answer: Buy some whole wheat pita bread, the kind that is not cut in half. Brown some lean ground beef and drain it well. Spread some fat free spaghetti sauce on your pita bread. Put some of the ground beef on it and whatever other toppings you like on a "pitza". Top with fat free or low fat mozzerella cheese. Bake in a 400 degree oven til cheese is melted and the pita is just starting to get crisp.
I have 2 daughters and when we make this, I put a variety of toppings, such as green peppers, onions, mushrooms, jalapenos, etc., in bowls and let everyone make their own to their liking. We also use chicken breast instead of ground beef sometimes. Use your imagination and see what you come up with.
