Question: How do I make shiitake mushroom jerky? I have tried the Primal Strips shiitake mushroom jerky, but it's quite expensive and I would like to be able to make it myself.
Answer: Season the mushrooms in soy sauce, onion powder, garlic salt and pepper for 4 hours. Cook in the oven on the lowest possible heat until dry.
Question: how do you processed strong flavored mushroom like shiitake? after u clean them...is there any certain tips when celaning them? do you squeeze them?
when u cook them, do you boil it first then discard the water n use the 2nd boiling water for stock?
i wanna know becoz whenever i cook shiitake mushroom i get like the "wrong" taste.....i still taste the "shiitake" but its like "the wrong one" my granma makes it very nice , i wanna know is there any certain tips? dont answer "ask your granma"

Answer: Before using fresh shiitakes, tear off the fibrous stems, and clean the mushrooms carefully with a damp cloth or paper towel. The mushrooms can also be rinsed briefly, but do not allow them to soak as they will swell with water. Dried shiitakes should be reconstituted in warm water for approximately one hour. Once they are reconstituted, chop off the stems. Use the soaking water and stems to make soup stock.
Cooking brings out the distinct flavor of shiitakes. Sauté or fry them in oil for 5 to 7 minutes; or cook them with a small amount of liquid in a tightly covered pan for 15 minutes.
Question: Where can I find gourmet shiitake mushroom dried soup mixes? I was looking for something that was dry packaged so I can take it with me to go hiking.
Answer: I see a lot of them in Asian markets. You might have to ask somone to read the lables to you.

Question: shiitake mushroom log mold? I have a shiitake mushroom log that produced one mushroom a few weeks ago. I shocked it again last week and it froze (I live in Milwaukee, WI) outside. It's now thawed, but there is white mold on the both ends of the log, but no signs of mushroom growth...is this normal? Also, right after the shock, I saw some green mold, but cut that off. What do I do now?
Answer: Depends on whether the spores were pre-inoculated before they were put in to the holes or not. If they were inoculated, they may begin to appear in about 2 weeks, if not and you have done it from a do-it-yourself kit, it can take up to 15 months if the growing conditions are not right.. Question: Are dried Shiitake Mushroom any better / worse than fresh kind? How does dry process work? I bought TONS of it in a large bag, but I was just wondering why dry instead of fresh and how are they any different as far as safety, nutritional benefit, etc?
Answer: fresh are always better. if fresh aren't available, the dried work fine. they just need to be rehydrated in some hot water. dried tend to be a bit rubbery compared to fresh. they have great flavor though.

Answer: Paul Stamets has written several books on mushroom culture which are readily available through most retail book sellers. I highly recommend any of his books especially The Mushroom Cultivator or Growing Gourmet and Medicinal Mushrooms.

Question: Shiitake Mushroom, Prosciutto, & Gorgonzola--PROFESSIONALS ONLY? I was at the Top of the World restaurant in Las Vegas recently, and a a garnish to my steak there was a prosciutto-wrapped, gorgonzola stuffed, shiitake mushroom that was the best thing I've eaten in my life. I have searched everywhere to find a copy-cat recipe and haven't been able to find anything. I could probably figure out how to make this, but I wondered if anyone had a genuine recipe?
Answer: As a former chef the mushroom cap would have been partly cooked the gorgonzola pressed in and wrapped in prosciutto and then finish in a pan when the steak was ready, now if you want to make the same thing at home, I would use Gorgonzola and a bit of other blue cheese a few white bread crumbs, seasoning is not necessary as the cheese is reasonably salty, even a few crushed walnuts.
Take the stem out of the fresh shiitake mushroom caps, sauteed them lightly in butter season with salt and pepper, even a small amount of garlic, then when just half cooked remove them cool and place in the frig, makeup the cheese mixture, spoon it into the caps and wrap with a single piece of prosciutto, and place a toothpick in them, heat in a pan on medium heat until the ham is browned and heated threw.

It is supposed to be excellent for the heart. What is everyone using this for, all over the world, and how are they preparing their dishes with this vegetable?
Answer: You can use it in soup (miso soup, or napa with ginger). If you're not a vegetarian, shiitake goes very well with chicken. I stir fry quartered shiitake with cubed chicken breast (with ginger and garlic, salt and pepper). Also try stir fry bamboo shoot, tomato, cubed chicken and sliced shiitake (with ginger, garlic, chili, salt and pepper to taste). Add some cooking wine too. It's yummy! yummy!
