Substitue

Question: is it possible to substitue butter for shortening here? hi, i am making shortbread cookies and it calls for 1/4 cup of butter and 1/4 cup of shortening. i don't have shortening on hand, so is it possible to substitue butter for the shortening?

Answer: Go ahead an substitute, but your cookies may turn out a bit differently. Butter has a "sharp" melting point meaning that adjusting the temperature by just a few degrees makes the butter go from a solid state to a liquid state. This means that the cookies are more likely to spread. Shortening doesn't melt as fast, so the cookies have a chance to cook a bit more without spreading. You can mitigate the spreading by making sure your dough is really cold when you put it in the oven. Good luck!
