Anti-oxidants

Question: Does boiling water kill the anti-oxidants in white tea? I'm only drinking it for the health benefits, I'm not too keen on the flavour. I've read a lot about how boiling water kills the anti oxidants and how certain minerals in tap water 'bind' the anti oxidants. Is this true? How can I get the most anti oxidants and health benefits from white tea? Thanks - but I really don't care if its bitter, I'm not drinking it for the taste anyway, just the supposed health benefits.

Answer: Boiling the water won't cause any problem, but pouring boiling water over white or green teas will burn the tea leaves and could destroy not only any flavor but may damage some healthy compounds. The water should be around 170F. I like white tea, especially with a tsp of buckwheat honey. If you're drinking something for your health, you might as well try to prepare it properly so there's a chance you'll enjoy it. I like a lot of things that are good for my (tea, coffee, extra dark chocolate, cranberries), but I refuse to consume something I can't stand (weak/burnt tea, bad/stale coffee, sweetened fruit juices, Castor oil) just because they're supposed to be "good for me"
