Question: How to cook homemade versions of the frozen veggie burgers, etc? And would it be cheaper to make it homemade or to buy them already made?
I'm talking about the garden burgers, black bean burgers, chick*n patties and nuggets, etc etc etc.
Do you think it would be cheaper to make these myself and freeze them, or to just buy them already made from Boca, Morningstar, etc?
And do you have any recipes or ideas on how to make these homemade?
Thanks kindly in advance!
Answer: 1 (16 ounce) can black beans, drained and rinsed or 12 ounces of leftover lentils, baked beans (homemade), or 1 can of veggie baked beans with liquid
1/4 cup of finely chopped shallots
1/4 to 1/2 cup of chopped yellow or red pepper
1/4 cup of firm tofu drained in cheese cloth (can use more)
1/4 cup of celery, well washed
1 brown egg with no blood spot, room temp. well mixed
4 cloves garlic, minced
2 tablespoons of ground walnuts or almonds
1 teaspoon of chili powder or low sodium soy sauce
1 tablespoon of thyme
1 teaspoon of fresh parsley, washed & check for bugs, chopped
1/2 cup of graham bread crumbs toasted or gluten-free bread crumbs (add more if needed to make firmer burgers)
1/4 teaspoon of black pepper, ground, pinch of salt (if not using soy sauce)
Pinch of fresh cinnamon and ginger
I grill or fry lightly the veggies: shallots, pepper, celery in grapeseed oil. When onions clear I add the spices, walnuts, soy sauce.
Then in mixer or blender or processor (which I prefer), mix the veggie mix with egg, tofu, crumbs until mixture holds together. If too dry I have added grapeseed oil or white wine. Form in hands into four to five patties, I made six and serve with a portobello mushroom cap (the huge ones, grilled with low sodium soy & red pepper oil) and "caps" the formed burger in the sandwich.
Tastes better if you can grill the patties with salsa, or fresh tomato slice, or even cheddar cheese slice at the last minute. I have also used the extra liquid from the homemade baked beans or added roasted red peppers instead of mushroom, you can add fresh peas, but I never use corn or corn products unless I know it isn't GM corn. Takes 8 to 10 min. on grill, in oven on sheet, 10-15 min. until brown, turn. You can use pan, to brown but use grapeseed oil for the benefits. Buy FIT to wash all veggies, coating on eggplant, etc. is wax from petrol products or lard.
You can change the above recipe to use 3x more ginger, 2x more soy, 2x more onion and cinnamon and add fresh orange oil (organic) or tangerine oil to the tofu and use 2x more and 1/2 with lentils (not beans). I grill slices of oranges with skin, but remove it to add to burger for a top. Grilled with roasted garlic paste is different & I add orange liquor to make a sauce from organic mayo, white pepper, orange juice, lemon juice, & honey to sweeten it. Just mix small batches of various spices & fruits & veggies to find combinations you might like to try.
You can use peeled slices of eggplant, dipped in gluten-free almond or walnut flour or even potato starch (no corn), then in egg, then in left-over crumbs mixed with a tablespoon of parmesan cheese. You can bake, but I fry lightly with grapeseed oil. I serve on toasted whole wheat kaiser roll or homemade gluten free rolls with fresh roasted peppers or homemade salsa with a slice of cheddar cheese, easier to freeze too.
Question: What homemade remedy can I use to keep the animals off of the furniture? My grandma has me finding this spray she calls "cat and dog off." Its supposed to help keep animals off of the furniture but i can't find anything along that line in the store. Does anyone know what she is talking about? Or any homemade solutions for this problem?
Answer: Get a spray bottle and every time the cat or dog gets on the furniture you give it a spray of water in the face. They will soon get the message. It does work and doesn't hurt the animal.
Question: How best to make homemade cinnamon rolls? I found a recipe online for 'quick' (about 2 hours) homemade cinnamon rolls, and they were actually pretty good, but they weren't 'gooey' enough, per my husband. If I were to put a mixture of brown sugar/cinnamon/sugar and butter in the bottom of the pan first, then bake them, would that work or would that ruin them? Or, if you have a recipe for quick homemade cinnamon rolls, could you share? Thanks!
Answer: Rhodes frozen bread
3 c heavy whipping cream
3 c brown sugar
cinnamon
chopped nuts (optional)
thaw the bread, it will puff up in the bag and go from 3 loaves to one big glob in the bag.
Mix 1 1/2 c heavy cream and 1 1/2 c brown sugar in a bowl and pour into the bottom of a greased 9x13 pan. Do the same with the remainder of the cream & sugar. If you like your goo really cinnamony, add 2 tbls cinnamon to the mixture.
Cut the bag in half, and on a floured surface roll it out into a nice large rectangle. Spread melted butter over the surface and sprinkle cinnamon & sugar over and chopped nuts (optional). Roll length wise and cut into 1" to 1 1/2 " slices.
place in rows of 3 in the 9 x 13 pans and cover with plastic. Let rise sitting our, or put overnight in the fridge. Bake on 350 for about 30 to 45 minutes until golden brown. lossen with a knife or spatula and flip onto two trays. They are yummy and easy!

No, seriously, to everybody, how often do you make them, and what are the different ways, if any, that other people like to make their homemade tortillas?
Answer: Well I made them, and I'm hooked. They were more square than round but they sure were good :) From now on, I'll definately be making them instead of buying them. Thanks.
Question: How do you make homemade dog food? I am pretty satisfied with commercial dog food and I have no problem sticking with it, but I would just like to know how to make nutritional homemade dog food. My dogs are a golden retriever, beagle, and dachshund if that information is needed. I would like advice also, like what supplements to put in the food, and the right portions, and a professional website would be the best. I don't really want just homemade dog food that isn't any better than commercial dog food. Please help out. Thanks.
Answer: Do not feed your dog bones, especially cooked bones. Fragments can become lodged in the digestive tract. Canines in the wild who eat bones have the benefit of consuming hair and hide too, which have been found to ‘pad’ the bone fragments and aid in their passing. Other foods to avoid that are dangerous for dogs are chocolate, avocados, mushrooms, macadamia nuts, grapes, raisins, onions, and garlic.
Try one of these easy dog food recipes and watch your pup smile.
Question: What homemade toys can I make for my cat? I want to make christmass presents for my cat because I love him so much but I know that he loves homemade toys more than toys from the store so any ideas would be great! Thanks! Merry Christmas!
Answer: I like to get ping pongs and put a small hole in it to fill with catnip. Also panty hose is great to put catnip in and make a small ball or snake just tie the end of it off.
Question: When making homemade peanut brittle what can I do to make the brittle harden up? When I´ve cooked homemade peanut brittle it never gets hard enough, its like pasty and gelly like, i can never get it real hard, what can I do for it to really harden up?
What if i dont have a candy thermometer?
Answer: with brittle when it is done cooking you will smell a slight carmalized smell and the it will start to get dark also. Your not cooking it long enough. Also if you pay close attention to the tention on the wooden spoon your using (not metal) you can feel the brittle getting thick as you stir. You can see the change of size and roll pattern of the brittle when it is done. You can put a glass plate in the freezer and drop a few test samples on the plate when you think it is done. It will harden very fast on a cold plate. HINT: as soon as your done with your cooking pot fill it with water or you will be scrubbing for hours to get this stuff out. lol
Good Luck,
Cheri'
Question: Anybody making Homemade bread for Passover? Or are you just going to buy the mix for it? I think I will just buy the mix, I don't feel confident in doing it homemade.
I meant the mix for the matzo.

Answer: Making matzoh that doesn't taste just like cardboard is very hard and time consuming. I recommend using the ready made.
Question: How do I build a homemade wind generator? Wondered if anyone knew how to build a simple homemade wind generator to power our home? A homemade wind generator that is not too complicated would be good. Do you know how to build a wind generator? Please help us.Thanks
Answer: The first thing you need to do is figure out how big of a wind generator you need. Most wind generators that are over 1000 watts in generating power are quite a bit more difficult to build. You will need to have your wind generator 15 feet above any obstruction within 300 feet. That is a must.
Some great resources exist but probably reading an article or two about building wind generators would help a lot. Try the resource I listed for a very informative article, there is mention of a website in the article where you can find some great wind generator plans too. Hope this helps, we have built 3 wind generators so far with these plans.
Question: When making homemade pasta, is it better to use all purpose flour or bread flour? Please only answer this question if you have made homemade pasta before. Thank you.
Good answers so far. I read that bread flour has more gluten and makes a stronger pasta. IDK. I have not tried semolina flour yet. I am also kneading by hand and then running the dough through a pasta machine.
Answer: Fresh pasta contains only three ingredients: flour, salt, and eggs. Amounts of each depend upon the amount of pasta you want to make. You decide.
Semolina, a high-protein flour made from Durum wheat, makes better pasta than all-purpose flour. It creates a stronger gluten structure, allowing for more pliable dough.
Salt provides flavor, and the eggs create richer dough, along with binding the dough together.
Olive oil is sometimes added for flavor, or, if the pasta is to be dried, water is used instead of eggs.
Mixing:
Kneading the dough creates the important gluten structure that holds the pasta together. Using a stand mixer with a dough hook simplifies the process: just add the ingredients and mix. Kneading by hand takes more effort, but is still quite enjoyable (and a good workout).
Start with a large, clean work surface. Make a mound of the flour and salt with a well in the middle.
Add the eggs to the well, and start stirring with a fork, slowly incorporating all the flour until the dough comes together.
Knead the dough until it is soft and pliable. This might take several minutes.
Rolling:
A pasta machine is fresh pasta's best friend. Just follow these tips for flawless dough:
Use the machine for the final kneading. Run the dough through the widest setting on the machine, fold into thirds, and roll again. Continue this process until the dough is shiny and elastic.
Work the dough through the settings of the machine until the desired thickness is reached.
Four hands are better than two: enlisting some help with turning the handle of the pasta machine will make this job much easier.
If you're working with only a portion of the dough at a time, keep the remainder wrapped in plastic to prevent it from drying out.
Rolling by hand works, too, and can easily be done with just a rolling pin and a large work surface.
Just as with a pasta machine, roll the pasta dough flat, fold into thirds, and roll flat again, until the dough is shiny and elastic.
Make sure the dough is in small enough batches to be workable. (Slightly smaller than your fist is a good gauge.) Keep extra dough covered in plastic until you're ready to work with it.
Roll to the final thickness, and form desired shape.
