Meals And Menu Planning
Question: Menu Planning ideas or software? I have three teenagers who are a bit picky. Does anyone have a meal/menu planning system or software that fits a busy schedule? I've tried "Let's Dish" meal preparation-- and loved it, but the kids didn't love the menu.
I tried to prepare crock pot meals, but they seem to end up too mushy.
Anyone have any great shortcut or planning ideas? Thanks.
Answer: Russian Potato and Mushroom Croquettes recipe -
Cuisine: Russian
• Ingredients
7 potatoes, peeled
5 c water
1 onion, peeled and chopped
400 g mushrooms
1 tsp oil
1 tbsp water
1 salt and pepper, to taste
1 c flour
1 tbsp oil
• Method
Boil potatoes in water till tender. Drain and mash potatoes. In a separate pan, saute onions and mushrooms in oil and water over medium-high heat for three minutes. In a large bowl, mix mashed potatoes, sauteed onions and mushrooms, seasonings and flour together in a large bowl. Form croquettes. Heat oil in a large frying pan and fry croquettes over medium-high heat for 8 minutes on each side or until light brown.
Serve with sour cream and chopped greens.
Pskovsky Hot Vinegret recipe -
• Ingredients
3 ea potatoes
2 ea carrots
1 ea turnip
5 tb canned peas
Sauce:
5 tb vegetable broth
oil
1 ts flour
1 ea onion
3 tb canned mushrooms
celery and salt to taste

• Method
Wash vegetables, peel and cube. Then stew every vegetable (except peas) seprartely in a small amount of water. Combine and drain off vegetable broth.
Sauce:
Oil the pan, heat a little, add flour, stirring constantly. Then, very carefully, pour in the broth, so that there are no lumps. Add in finely cubed onion, celery, mushrooms and salt to taste. Cook on low heat for 15 minutes.
CABBAGE WITH TOMATOES~KAPUSTA Z POMIDORAMY recipe -
Cuisine: Ukrainian, Yield: Feeds 6 people, or 4 Ukrainian
• Ingredients
What you need: one small head green cabbage~one small onion, chopped~3 tablespoons plus 1 tablespoon butter~2 tablespoons water~one tablespoon white flour~one cupful cooked tomatoes, strained~2 tablespoons sour cream~salt and black pepper to taste

• Method
What you do: Shred the cabbage. Cook the onion in 3 tablespoons of butter in a large pot or skillet until tender but not browned. Add the cabbage and the water and let cook uncovered for about ten minutes until the cabbage is tender but still slightly crisp. In a small saucepan, heat the remaining tablespoon of butter, blend in the flour and stir in the tomatoes. Cook over low heat, stirring constantly until the sauce thickens. Stir in the sour cream, adding salt and black pepper to taste. Combine the sauce with the cabbage and simmer for a few minutes to blend the flavours.
Meat and Cabbage Pie recipe -
Cuisine: Russian
• Ingredients
Filling:
1 head of cabbage (small to medium)
1 onion (medium)
4 large eggs (hard boiled)
1 lb (or 500g) ground beef
Salt
Other spices
Crust:
-If you live in countries where a ready pie crust is sold in supermarkets, get 2 9-inch round crusts (any brand will work);
-If you have to make the crust yourself, here are the ingredients for the dough:
2 1/2 cups of flour
1 teaspoon of sugar (regular or powedered)
1 teaspoon of salt
1 cup of solid vegetable shorteninng OR 1/2 cup of vegetable shortening and 8 tablespoons of unsalted butter OR 1 cup of unsalted butter
1/2 cup of ice cold water

• Method
Filling:
Finely cut the cabbage and onion; heat up a large skillet with 2 tablespoons of oil; when it is hot add chopped onion; satee the onion until golden brown; then add cabbage and cook on medium heat for 15-20 minutes or until golden in color and soft in consistency. Simulatenously, in a separate skillet satee the ground beef; cook it for 5-10 minutes or until the meat is of consistent brown color and there is no redness. Boil the eggs. When everything is ready, mix the cabbage, meat, and chopped eggs together; add salt and/or other spices. Your filling is ready!
Crust:
If you are making your own dough:
In a large bowl thoroughly mix together flour, salt, and sugar. Then add shortening (broken in large chunks) or butter (cut into small pieces). Begin chopping the fat/butter with a pastry blender or 2 knives. When you are done, the mixture should be of coarse consistency; dry and powdery. Then drizzle over the mixture 1/3 cup + 1 tablespoon of ice cold water. Begin mixing the dough with a spatula until the mixture looks evenly moistened and begins to form small balls. Press down on the dough with the flat side spatula. If the balls of dough stick together, you have added enough water; if the do not, drizzle the dough with 1 to 2 tablespoons of ice cold water. Continue to mix the dough first with the spatula, then with your hands until it coheres. The dough should look rough, not smooth. Divide the dough in half; press each half into a round flat disk, wrap in plastic and refrigerate for at least 30 minutes before rolling. The dough can be frozen for up to 6 month in an airtight packaging (Thaw completely before rolling).
When your dough is ready to roll, roll out 2 9-inch (~22cm) rounds. Place one crust on the bottom of a 9-inch pie pan; press the dough over the bottom and into the corners of the pan. Transfer the filling into the pan; smoothen the top. Place the second crust on top and seal the sides. The dough should not hang over the sides of the pan too much, otherwise it will char; you can either cut the excess dough with a knife, or fold it inside the pan. Before baking, cut 4 ventilation holes on the top crust of your pie. Bake in an oven pre-heated to 350F (175C) for 20-30 minutes or untill golden. When done, let the pie sit out for 15-20 minutes. Serve warm. Great with milk. Enjoy!!!
Chrov plav (rice pilaf with dried fruit and nuts) recipe -
Cuisine: Caucasian
• Ingredients
1 cup of long-grain unconverted white rice
2 tablespoons of currants
4 medium prunes, pitted and cut lengthwise into narrow strips
4 tablespoons of butter
1/2 cup of dried apricots, cut into narrow strips
1/4 cup of finely chopped blanched almonds
1 tablespoon of honey

• Method
1. Soak currants and prunes in a bowl of warm water for 15 minutes, then drain and pat them dry with paper towels.
2. Melt the butter in a 10- to 12-inch skillet over high heat and add the apricots, currants, prunes and almonds. Reduce the heat to low and cook uncovered for 3 to 5 minutes, or until the nuts are lightly colored. Stir in the honey and rice, cover with 2 cups of water and bring to a boil over high heat. Reduce the heat to low, cover the pan and simmer for 25 minutes, or until the liquid has been absorbed. Serve hot.
Question: For a beginning cook, why does cooking and meal / menu planning seem like such a daunting task? it's like... not only do i not really know how to cook... i feel like the planning and shopping is hard to figure out / balance out too. and finding time for it all.
how did you guys start out cooking/menu planning?
Answer: KIS...Keep it simple. It depends on how many you are cooking for but start out by going to a cooking site and finding some easy recipes. Find 7 of them...one for each day and write the ingredients on a piece of paper and use it as a shopping list for your weeks groceries. Make sure you dont double up on things...if one recipe uses 2 eggs and another uses 1 and another uses 4 dont go buying 3 dozen eggs. Just buy 1 dozen and use what you need. Once you learn how to make a few meals this way you can start to modify the recipes by adding or taking away things you like or dislike. For example if you are making a stew you might like to add mushrooms but you might not like carrots very much so you can leave them out. After a while you build up a repertoire of things you can cook and it's not so hard to figure out what to buy at the supermarket because it is all in your head.
Question: Menu Planning Software Program? I'm looking for some meal planning program where I can plan meals based on recipes that my family will actually eat. I would like to be able to eliminate ingredients that picky eaters won't eat and yet still track all nutritional information so as to create a balanced meal plan. Does anyone have any ideas?

Question: Type 2 Diabetes Online Meal/Menu Planning Guide? I am a type 2 diabetic (just found out a few months ago) I have a hard copy meal planning guide I've sort of been using. I'm more of a computer person and would like to find a free online meal planning guide. I wasn't able to locate one on the ADA site, I would appreciate if someone could provide me with a link of where to specifically go one.

Question: Help, I need some idea for planning meals and menus for my family of 5.? We are trying to not spend as much and we have been eating out too much, so now I am trying to do some meal planning and need some ideas to keep it interesting for all of us. My kids are 16, 12, & 8, not picky eaters, but I do need some easy inexpensive ideas.

Answer: Go to Kraftfoods.com....They have menu planning, short cuts and everything you need.... If you get the magazine that's really nice too- lots of good recipies in there..Quick and easy too... I also freeze batches of things... If I make lasagna I make 2 and freeze one. It really helps ! Also, if you clip coupons that can really save you big time... On avg. I save $100 or more a month with coupons.. While I don't have 5 kids- I'm not working so every penny counts.... I hope that helps...Good luck
Question: Do you know where to find a budget diet menu plan? Not just a diet please, a diet menu plan with complete meals and recipes. I just can't find one with a grocery list that costs lest than 50 bucks a week per person, and that's if I already have a fully stocked pantry. If I didn't have the pantry items like spices on hand, most meal plans I've seen would cost at least 200. Please tell me there's a budget menu out there :(
Answer: Unfortunately there are no plans out there that cost less than 50 bucks a week for a full week. Most of them out there cost about 30-50 dollars a day. However, Nutrisystem has a meal plan where they provide you with three meals a day plus snacks, and it really helps you lose weight for about 10 dollars a day. That is by far the cheapest one out there.
Question: Menu planning for your family? All mothers out there, what is the best way to deal with dinners??? I hate going out to eat because I have been to busy all day to think about dinner. Do you go grocery shopping all the time, plan meals, have the same few recipes you use all the time?? I was never really prepared for motherhood as far as mealtimes go...I have 3 children, 17yrs, 11yrs, and 10 - whew. I always feel like we are just winging it as far as dinner is concerned. Thank you in advance for all your tips and tricks......We own our own business, so I do have a somewhat flexible schedule, but I think I am a workaholic...haha.....
Answer: I get paid every 2 weeks so I grocery shop once every 2 weeks except for milk and fresh fruit and veggies. I plan meals and not what I will have on what day just what 2 weeks worth of meals I will be cooking then I ask what would you like for dinner tonight and give a choice of 2 or 3 from my list that I feel like cooking. It works out well for us
Question: Need help planning aweekly meal menu...? Hi, I’m a mom and any kind of help planning meals is terrific! I get so tired of trying to find new inventive ways to make the same old thing or even new and easy ways to cook older versions but at the same time trying to make sure my family would like and eat it. Answer: try making a kiesh, in a pie tin, with spinach, my mom made it for my brothers and i once it was delicious!! even my 6 year old brother ate it.

Question: Does anyone have a Pre-Diabeties Menu they would be willing to share? I was recently diagnosed with pre-diabeties and am wondering if anyone has a really great food (diet) menu? Question: Help with healthy menu planning? Well I've been eating healthy/exercising for a few weeks now, and it's really exciting. However it's getting to the point where I need some variety in my life, and I'm having a hard time coming up with healthy recipes on my own. So far I've been having a lean cuisine for lunch and a nice big salad with tons of veggies and tofu or grilled chicken for dinner.
That meal plan is great and tasty for a week or two, but now I'm getting tired of the same thing every day. So I was hoping you could offer me some advice (or a website) with healthy meal ideas and/or meal planning (I'd like to be able to just go shopping once a week and make all my meals from that trip's groceries).
PS: I'd really like to go vegetarian, the only thing that's been holding me back is a freezer full of frozen chicken tenders that I bought a while ago. I feel bad wasting them! But my point is vegetarian meal ideas would be more than welcome! :)

And start using your oven (broil/roast) to cook your veggies. It's so easy and gives them a good caramelized flavor without having to use the stove. Some of my favorites are carrots, asparagus, broccoli, new potatoes...but really anything will taste great! Just coat with some olive oil and salt/pepper.

Question: Specilized Menu plan free of cheese and red meat!? I cannot eat red meat, VERY minimal amounts of cheese and only 1% milk. Question: Diabetes: Anyone know of a meal plan/menu to use? My father (in his 60's) is diabetic and has a weight issue (about 300lbs). He cannot exercise (disabled). Does anyone know where to find a meal plan/menu for diabetics?

Answer: Ideally, no book can help you.
Only a registered dietitian can make a black and white meal plan for him. Get a referral from his doctor to the registered dietitian.
The reason he is overweight is that he is eating too many calories per day relative to the amount of calories he is burning.
If I remember, just to stay alive needs about 1600 calories per day. More if you do anything.
Non pregnant women need about 1200 calories per day, just to stay alive. More if she is active or pregnant.
