Vitamin A

Question: Did you know coconut milk is a good source of vitamin D? Good to know... So coconuts have a lot of vitamin D??? Makes since since they grown in good sunlight. Or is it just fortified, dunno. The carton doesn't say fortified... since since they grown, sheesh must have typed in a hurry... Thanks for answering!

Answer: Hm, from the data I found, the coconut milk would have to be fortified with Vitamin D. Based on the data from the USDA National Nutrient Database, no vitamin D was detected in fresh/frozen/canned coconut milks. Is the carton of coconut milk the "So Delicious" brand by Turtle Mountain? http://www.turtlemountain.com/products/coconut_milk_beverage.html If it is the same brand, the ingredient label (not nutritional label) states the following for the original version of their product. "INGREDIENTS: Coconut Cream (Water, Coconut, Guar Gum), Organic Evaporated Cane Juice, Calcium Phosphate, Magnesium Phosphate, Carrageenan, Vitamin A Palmitate, !!!!Vitamin D-2!!!! ***This indicates that it was fortified, otherwise it would not be listed in the ingredients***, L-Selenomethionine (Selenium), Zinc Oxide, Folic Acid, Vitamin B-12." To sum it up, coconut milk is NOT a good source of vitamin D unless fortified.
