Cayenne Pepper
Question: What's the difference between cayenne pepper and hot paprika? I LOVE cayenne pepper - I put it on almost everything I eat. I've never tried any kind of paprika but I saw it next to the cayenne pepper and almost got it because it looks so similar! Does hot paprika taste like cayenne pepper? And is it as hot as cayenne pepper?

Answer: They're made from different peppers, so they taste different. I love cayenne, too. I also enjoy hot paprika, probably because I love the taste of the paprika peppers whether they're hot, smoky or mild. If you like the flavor of red bell peppers, which is the closest thing I can compare them to, you'll like hot paprika. Most people use paprika as an accent just for the color, but it's a delicious spice and deserves more use. Chicken paprikash (paprika) is delicious, but so is chili when made with lots of paprika, whether regular or hot.
Question: Can I use Chili Pepper in place of cayenne pepper? I know a lot of people have already asked if there's a difference between cayenne pepper and chili pepper but I want to know if I can substitute one for the other? I don't have cayenne pepper and a barbeque sauce recipe calls for it, can I just use chili pepper instead or will it make the barbeque sauce taste weird or different?
Answer: If you do it will probably taste like smoked chili. Not all Chili powders are the same either.
I manufacture BBQ sauce. The Cayenne is added for the "heat" factor. You should taste it without the Cayenne and decide what you want to do. Adding extra Ground Black Pepper will bring it up also.
You may not want "hot" sauce, so wait and taste it before experimenting. It will be worth it to add it later if you so desire.
It is not good to experiment with new recipes on the first run. You don't know what you are trying to achieve the first time around.

Question: Pepper growers: How do I tell when my cayenne peppers are ripe and ready to pick? I have a single cayenne pepper plant. It's not much, but I nearly lost it to a cold snap and I'm quite proud of it for recovering. About two and a half weeks ago, the plant exploded with vegetative growth, doubling in size and growing leaves like crazy.
After that, the plant grew little white blossoms that later turned into tiny red peppers. It looks like I'm going to have some fruit from this plant after all, but how do I know when they are ripe enough to pick?
And now that I think about it, I'm not too sure what to do with them once they are ripe. Should I dry them or use them fresh? How do I dry them? What do you use your peppers for?
Answer: peppers are ripe when they fully blush red or orange and start to wrinkle. Green fruits can be picked but they have very high levels of the nightshade toxin solanine (however, you would probably need to eat about 4 pounds of green peppers to really be affected by the toxins). You can allow them to dry on the plant (but then you run the risk of pest damage) or dry them off the plant. once dried, they can be crushed or powdered. the seeds have the biggest "punch" of hot flavor. you can enjoy them in any food that needs a little "zip". You can also enjoy them fresh in salsas. Unless you have very sensitive skin, there is little need to wear gloves to harvest or prepare. Such a process is only necessary for the super hot peppers like habenero. All the same, keep fingers away from eyes when handling any spicy ingredients.
Cayenne can also be blended and strained with garlic to make a home-made pest control. Most insect pests will go a running if they get a dose of pepper/garlic spray. It you mix it with a wax "sticker" or wetting agent to get the spray to retain on the leaf even during rainfall.
Question: Is cayenne pepper good to aid in digestion? I have frequent digestion issues and I heard that cayenne pepper is good for this. I burp a lot and have GERD as well as IBS and don't have a gallbladder anymore. So likely, as a bandaid affect it would work ....... i would suggest that you need to get to the source of your problem and find out what it causing the bad digestion.
Ditch the milk and dairy products i say ........ many many people find it extremely hard to digest lactose contained in milk and dairy products........... i would hazard a guess that is what's at the root of your excessive belching, burping and "IBS" issues ....... IBS really is just a b.s. name Doctors made up because they really aren't trained to pinpoint and diagnose food intolerances and allergies.
pump up your intake of fresh fish such as salmon and tuna and leafy and green vegies like celery, buk choy, broccolli, kale chard & fresh fruits~ all rich in calcium..... the fish is rich in both calcium and vitamin D and magnesium .... which are all essential for calcium's effective absorption......... ditch the pre packaged and junky type foods and try to base your meals around foods that you have prepared yourself .... fresh from God's table..... living vital healthy fresh fruits and vegies, lean meats and fishes, organic nuts and seeds like almonds, brazil nuts and sunflower seeds, wholegrains and cereals like brown rice, quinoa (pronounced keen-wah), buckwheat, peas beans and lentils..... nuture your precious vitality and do your best to wean right off the packaged foods ....... if you eat any ....... but do it slowly so that the detox isn't nasty.

Answer: yes it will work dogs smell where they go if it smells bad they will find another place. The pepper will not hurt the dog. I do not think it will attract any other critters. And thankyou for looking for a humane way to deal with the problem.

Answer: there is no spice to make it milder but if you add butter or cheese, or oil or any kind of FAT, it will make it less spicy. Fat has an affinity to capsacium (the thing that makes spices and peppers hot). Another thing to do is to add CHEESE to your chili and it will definitley make it milder. Ask someone who likes spicy food to try the cheese method. The more cheese the better.
And yet another thing to do which might sound funny is to eat the chili with some ice cream on the side since ice cream has fat and is very cold. It will definitly make your mouth feel better.
Question: Could I substitute paprika for cayenne pepper in a ginger snap recipe? I can't find my cayenne pepper and I need it for ginger snaps. Answer: My understanding is that it's a pretty essential part of the process. You should only be putting a pinch in - so just take the amount down and that should help. The burn in your stomach could also be because of the balancing out process - your stomach is still producing a lot of acid but isn't using it to digest. This will decrease as you continue on the fast.

Question: Can I use green cayenne peppers in my cayenne pepper spice? I want to make my own Cayenne Pepper spice. It is getting close to the end of the growing season where I live, and there are a lot of beautiful green chilies still on my plants. I'm wondering is if it is ok to use some of the cayennes before they get to the bright red stage. Can I dry some of the green ones and grind them along with the red? I hate to waste the green ones!
Answer: You can harvest them and allow them to change colour off the veins/plants, peppers will go red once harvested, left on the veins/plants they just grow more, I sun ripen mine, string them up and set them in a sunny area or in the house with a window that gets full sun, I sometimes buy a few peppers like ancho, poblano and jalapeno and set 2-3 on the window sill, in time they go from green to red, I dry them completely, even have smoked them on my portable electric BBQ, just added a piece of hickory wood an allow it to smoulder.
You can make a green hot sauce like the green tabasco type, it is not as pungent of hot, but is an alternative to the red, I also pickled fresh green finger peppers for eating or using in dressing or curry's.
Question: Is there a difference between ground red pepper and ground red (cayenne) pepper? If a recipe specifys red pepper (cayenne) would it be okay to use a spice called red pepper but excludes the word cayenne from its label?
Answer: to my knowledge, yes there is a difference. isn't cayenne a spicy kind of pepper and red pepper just like pepper only red? i believe i am correct.
Question: What is the best repellant, (besides cayenne pepper powder), to keep dogs from digging? I have an 8 month old Lab Puppy who just keeps digging everything I plant in my back yard. The only thing that seems to work is cayenne pepper powder, but with all the rain, it is a hassle to keep applying. Any suggestions for something that will have some residual effect.

Answer: The pet department at Walmart has a spray called Stay OFF that you can spray on stuff to keep animals away from it. Digging? Maybe a rolled up newspaper is your best bet.
