Question: Low calorie cooked breakfast ideas? My brother (25 years old) is comig home for a few days and he loves it when I cook breakfast for him but I want it to be low calorie. Any ideas? And it has to be cooked, not just taken out of a fridge because my brother likes me to cook it for him
Not omlettes or fruit salads because I have made them so many times before
Answer: some french toast made with wheat bread and apples cooked with honey and walnuts on top
cinnamon oatmeal with lots of fresh fruit
whole wheat pancakes with bananas cooked with honey and nuts. maybe a dollop of yogurt on top
an eggwhich made with a whole wheat english muffin, lean ham, and a small amount of cheese
a frittata with lots of vegetables and lean meat like chicken and ham
some fresh baked oat muffins loaded with nuts and raisins and a small bit of butter
Question: Need to know name of Low Calorie Alternative Cooking Show Please!? I recently watched an episode of a show where there were several women creating low-calorie alternatives for a bride-to-be whose high calorie favorites were not allowing her to fit into her dress. Don't think the show revolves around the bridal event, focused more on teaching her how to cook the low-calorie alternatives. In this particular episode, each of the show's hostesses came up with a tasty alternative: lasgna, indian curry...Not sure what channel I was watching on. Could be the Women's Network but not sure.
Answer: I never heard of it but it sounds like something I would definitely watch.
However, I do watch a cooking show on the food network. It's with Ellie Krieger. She is also a nutrionist. Her recipes are great and good and they are low calorie items. Tasty too.
Question: Any low calorie halloween baking/cooking recipes? I have been looking everywhere one the internet and nothing.
Im thinking of some kind of gelatin things, pumpkin bread, some form of fall trrail mix type thing, some crreeepppyy main dishes, and some fun desserts. BUT PLEASE LOW CALORIE. also, if anyone knows any low cal cookie recipes that would be great!
Answer: Here are a few ideas. You could sub low calorie ingreds for the ice cream, mascarpone etc. You could fill the mini baked pumpkins with raisins (to look like bugs LOL) for something creepy.

Baked Mini Pumpkins
Miniature Pumpkins as Serving Dishes
Cut a circle out around the stem (as you would when carving a Jack-O-Lantern) and scrape out the seeds and pulp. Scrape out some of the flesh from the sides of the pumpkin as well, in order to make room for
your stuffing.
Place pumpkins and intact lids in a baking dish and add about an inch of water. Bake at 350 F for about 30 minutes, until pumpkins are somewhat cooked but still firm. Carefully stuff the pumpkins with corn pudding, vegetables such as green beans or peas, or corn bread stuffing.
Continue baking stuffed pumpkins until stuffing is cooked. Serve each guest his or her own stuffed mini-pumpkin.

Baked Miniature Pumpkin Pies
(adapted from Jim Boyan, historichotels.org/pumpkin)
1 each small sugar pumpkin (one per person)
1 Tbsp. brown sugar
1/2 Tbsp. butter
1/4 tsp. ground cinnamon
Scoop of vanilla ice cream (optional)
Preheat oven to 350 degrees F. Cut off top of pumpkin and scrape out all seeds and strings. Place butter and brown sugar inside the pumpkin and sprinkle with cinnamon. Put the pumpkin lid back on and place pumpkin in a baking pan with a little water in the bottom. Bake for about 30 minutes or until tender.
Optional: Serve with a scoop of vanilla ice cream in the pumpkin.

Baked Miniature Pumpkins
1 miniature pumpkin per person
Salt and freshly ground pepper
1-2 Tbsp. cream, milk, or mascarpone cheese
1 fresh or dried sage leaf
Grated Fontina or Gruyere cheese
Preheat oven to 350 degrees F. Slice off the top 1/2-inch of each pumpkin, scoop out the seeds, and rub salt and pepper into the cavity. Pour in the cream, add the sage leaf and the cheese, replace the lid and bake in a pan until tender, 35 to 45 minutes.

Question: I need suggestions for low calorie recipes or recipe books.? I am on my way to losing LOTS of weight. Answer: you can try different types of vegetable soups. they always have them in diet books so im pretty sure they are low calories :)
Question: Going to cook healthy, low calorie meals for someone. What to charge? I know a woman who is having back surgery and wants me to make very healthy, low calorie meals she can easily heat and eat. To start, she has gift cards to Whole Foods to use, so there won't be a charge for the actual food. If I make two meals a day, and deliver them twice a week, what should I charge? And hints on how to go about it?
She isn't a friend; of course I wouldn't charge for that! She knows I can cook and wants to eat well; a friend referred her...
Answer: You are going to have to charge by the hour, otherwise how could you figure it out? You also are going to have to get (or use hers) casseroles, storage containers, a reasonably sturdy box to transport the meals. Don't forget to add in shopping and clean up time. Good Luck!

Answer: You can make a delicious vegetable soup using chicken broth :)
INGREDIENTS
vegetable soup recipe
Note: You don't have to use ALL of these vegetables for the soup to be tasty. On the other hand, feel free to add any that YOU like :)!
* 1 tablespoon olive oil
* 1 tablespoon unsalted butter
* 1 medium sized onion
* 2 each carrot
* 1 handfull green beans
* 8 each button mushrooms
* 4 cups chicken stock
* 3 cups water
* 6 each potato
* salt and pepper
* 1/4 cup parsley
PREP WORK
Not too much prep for this soup. Just chop up the onion, slice the carrots into 1/4 inch thick pieces, trim and halve the green beens. Slice the mushrooms into 1/4 inch pieces, chop the potatoes into 1/8's or 1/4's depending on their size and chop the parsley. Now you are ready to put it all together.
HOW TO MAKE AT HOME
Heat butter and oil on medium high in a soup pot. Sauté onion, carrot, green beans for 3-4 minutes.
Add mushrooms and cook for another 2 minutes. Add chicken stock and water, potatoes, and season with salt & pepper.
Bring to a boil, cover, reduce heat and cook at a gentle boil until the potatoes are tender. (approx. 15 minutes) Add parsley just before the potatoes are cooked.
Season to taste and serve this delicious low-cal meal.

Answer: for lowfat and low cal cheeses, use a hard cheese like parmesan or romano... very low fat (which is why it's so hard) and a little goes a long way as far as adding flavor. If you want cheese you can actually eat on a cracker or melt into a sauce, use a 2% milkfat reduced fat cheese.

Answer: You can saute in broth instead of butter or oil. I usually use olive oil spray and about a teaspoon of actual olive oil.
Instead of serving on a bed of rice, make a bed of zucchini by grating it directly into a pan and heating it. It takes a very short amount of time, and needs no liquid or fat. Just keep stirring it. I use this under a saute of chicken, fresh mushroom and fresh tomatoes, cooked in a little white wine with garlic and onions. You can also use it with rice, cutting the calories way down. Same with spaghetti and spaghetti squash. Cut the squash in half, poke a couple holes in it, and steam it in the microwave or in water. Then scrape the pulp with a fork, it turns into strands like spaghetti. Mix it with spaghetti and slap the sauce on top. Don't give it to children too young to eat hot dogs, grapes, raisins, because they can choke on it.
Make soup. Use chicken, vegetable or beef broth, whatever vegetables you like and some whole wheat pasta, then when the noodles are ready toss in a drained can of beans. Very low calorie, very high fiber. Cozy and filling on a cold winter day. We eat soup at least one evening a week, and I take it to work for lunch. I get this big huge of frozen vegetables at Walmart, called Normandy mix. I buy the broth at the dollar store. A couple boxes of broth, a few cups of frozen veggies, and some whole wheat shells, a can of white beans...dinner. It's easy to adjust the kind of vegetables depending on how picky your eaters are. I have two absolute pills. They only eat zucchini (very nice in soup, kind of sweet) and yellow squash, carrots, corn, green beans and potatoes. One will also eat tomatoes and the other will eat red beets. These are adults! What a pain. Neither one will touch onions or mushrooms.
Tilapia. I saw a show on TBN that said this was the fish in the baskets for the sermon on the mount. Be that as it may, it's really delish fish. Very mild, not terribly expensive and the frozen from Walmart is really good. I dredge it in Progresso Italian bread crumbs mixed with parmasean cheese. Then I saute it on a griddle spray with olive oil spray and about a teaspoon of olive oil. It only takes a few minutes on each side, then just before serving I squeeze lemon juice on it. Even non-fish fans will like this. It works very well with most kinds of filets, and also thin cut chicken breasts and tukey cutlets. My dad doesn't like turkey, but he likes it this way.
Stir fry, saute, George Foreman grill, pan spray, lots of vegetables, whole wheat pasta, brown rice...those are the things I do. Olive oil is very good, and you need a lot less of that than you do margarine or butter. My mother always cooked in tomatoes, but don't really like red sauce or tomato gravy.
I'm diabetic so I try not to kill myself when I cook.
Question: Low calorie Recipes, what is your favorite? When I say low calorie, I mean about <300 calories in total, a little more is fine, but not over 350 calories please. I've started a low calorie lifestyle, and I'm wondering what kind of recipes others enjoy to make and eat. Dinner, snack, or desserts! I like chicken, beef, turkey and fish is okay but was never a great seafood fan. I like most veggies and am open to new stuff. I've never had tofu, and it doesn't seem too appealing. Answer: This one is both low-cal and low carb, very easy, and a crowd pleaser!
Broiled Sausage & Peppers
Ingredients:
1 packages light sausages (such as chicken apple or turkey sausage)
3 bell peppers (different colors makes it prettier)
1 white onion
1 can Italian-style tomatoes
2 tbsp olive oil
Brown sausage, slice and put lay out in roasting pan. Cut onions & peppers, toss in olive oil and salt & pepper. Add tomatoes and pour mixture over sausage. Bake at 350˚ for 30-45 min. Serve with spaghetti squash if desired.
Question: What would be a good low calorie meal to cook tonight? I am trying really hard to lose some weight lately. Nothing but sweets and lots of junk food sound good. Plus all the recipes that are 'healthy' have odd ingredients that are either close to impossible to find or are just darned expensive... So does anyone have some good tips and or recipes that could help keep me on track better?

Question: Can you suggest some low calorie lunches that are not cooked? I work in an office and am running out of ideas for healthy lunches as part of my diet. I eat most things except tuna and can't anything that needs cooking or heating up (like jacket potato) due to the smell. Soups are allowed but I am getting bored with them and as it gets warmer I won't necessarily want soup. No internet links please.

Answer: Tortilla wraps are great. You can fill it with salad, chicken, cheese & branston, meat etc. You could also make a salad and add beans to it. A spanish omlette made with potatoes, onions, peppers (whatever you fancy) can be made the night before and you can cut it into slices and have that cold for lunch.

Answer: Lemon pepper chicken. Just sprinkle lemon pepper seasoning on the chicken and bake it in the oven on 350. Yummy!

Answer: Your best bet is to go to the library and ask the librarian. They will have some great ideas and you can check out the book and review before having to buy one that your realize wasn't worth the money. I do this all the time -- for a variety of cookbooks -- Italian, low calorie, grilling, etc.

Answer: Well, your caloric intake will decrease dramatically just by cutting out the Fast food and massive kudos's to you for making home cooked meals. Your meal sounds fabulous, but here are a few things you need to look for. Marinades often contain a bit of sugar, as well as the Teriyaki Sauce but a little, goes along way. Wild or brown rice is better than white, but it's portion size that gets us all. We all want big meals but with less calories, so we often sacrifice flavor. But, I say, get the flavor in smaller portions, it's healthier and we don't have to sacrifice anything! A 4 oz. portion of protein, a cup of starch and double the veggie intake and you're in! Seeing as you're leaving the "windows of food" and taking it home for meals, you're already 3/4 of the way there to impressive improvement for health, taste and your wallet and waist line will be happier! its got 200 cal/serving.
(6 servings)
3 cups cooked pinto beans (1 1/4 cups dry, soaked overnight then boiled over low heat until cooked)
200g button mushrooms, cut into quarters
1 large green or red bell pepper, diced
400g can chopped tomatoes
sachet of taco seasoning
2 large carrots, cut into chunks
1 medium onion, chopped
2-3 cloves garlic, crushed
water
4 small tomatoes, chopped into chunks.
(OPTIONAL) 1 teaspoon cocoa powder
1. "Fry" the garlic in a pot (dont use oil, use water- this is the tricky part). Add onion and 1/4 cup water, stir until see through.
2. Add the chopped mushrooms, carrots and bell pepper. Add 1-2 cups of water, leave to cook for about 10 minutes on a medium heat.
3. Combine taco seasoning with 1/2-1 cup of water. (If you want add the cocoa powder now) Mix until there are no lumps Add to pot.
4. Add canned and chopped tomatoes, and pinto beans
5. Leave to cook for about 20 minutes in a VERY LOW heat.
It tastes good with couscous or by its self.
the only fat in it is the fat that naturally occurs in the veggies/beans + if you choose to add cocoa.
it's super, super low. (most of the calories are from the seasoning/beans, which are very low in fat.)
Question: What's some low calorie baking ideas? I've been home a lot this summer and i've gotten really into baking. But at the same time, my entire family is on a diet. What are some great low calorie baking ideas. Or just cooking in general. haha, anything with eggs and flower. But low calories ^^
Answer: You can experiment with some alternative flours and come up with breads that are lower in carbs. If you get into a bread you like, cut it thin for more calorie savings, and experiment with mustards, and fruit spreads like Polaner to dress your sandwiches.
You can bake with Splenda to cut some of the sugars. The kind in the bags, I think, measures like sugar.
You can also experiment with baking quick breads. Zucchini, carrot, banana, pumpkin...all make a great quick bread. With Splenda to sweeten, and fat free cream cheese on top, you have a relatively healthy sweet treat. Moderation is the key.
Not really "baking" like you mean...but using your oven, you can go to the farmers market and load up on things to oven roast. Peppers, for example...you can make your own roast peppers for salsa. Roasting brings out an excellent and unique flavor in most veggies. You can do spaghetti squash, and potatos, carrots, tomatos, eggplant, etc...
You can also do this egg wash thing with your potatos, cut in wedges...and then you can bake them, and they come out like french fries only no fat except a bit of olive oil or cooking spray.
I think if you really want to do your family a favor, just talk to them about your baking. It may be that they want you to make only enough for yourself and don't smell up the house with the cookie smell when they are home. Then hide the stash. So you don't tempt them. OR it may be that they like a weekly treat, like a dessert that gets totally eaten right then after that meal, and no more to snack on. It may be that you just enjoy the baking as an activity...and it is less important eating the item. In which case it might be an excellent summer job opportunity, or a volunteer thing where you bake for others.
